How we bake it
Boiled first and then baked, which is the whole argument. The boil sets the crust before the oven can, and that is what gives a proper bagel its shine and its chew. Skip it and you have a bread roll with a hole in it.
Six to a batch, because nobody has ever wanted one bagel. Choose plain, sesame, whole wheat, whole wheat with seeds through the crust, or mixed cheese folded into white flour dough. Split and toast them the next morning and they are arguably better than on the day.
