How we bake it
Twenty seven layers of European butter, folded and rested until the layers are right. There is no way to hurry lamination: the dough has to be cold, the butter has to be pliable, and the person doing it has to be willing to stop and wait. Most of the work is waiting.
The result shatters when you break it and pulls apart in a honeycomb inside. Best within an hour of the bake, still faintly warm, with nothing on it at all.
